I have set up my site to have two languages.  I'm set up as Japanese, English. In Squarespace I wrote the current default language first, then the two dots, followed by the second language. All throughout the site. Now I've decided I want the second language to be default, and to have the first language be accessed if the reader wants to switch.   Is it possible to make English appear for English readers by default without switching the languages around all over the site?

Yes, it is possible to do that. Simply use the parameter “?lang” (no quotes), for example, if you wish for it to be in English by default, use ?lang=en. Let us know how that goes and if it works out for you, I will make sure to follow up accordingly until your problem has been resolved.
